Just got a 38 off shore....3 yamaha s ...super boat!!
Coming from big diesels...man..I look terrible around the docks!!
She does not like to back up!! Have been killing middle engine, seems to help.
Give me some advice?

The props on your diesels were much deeper in the water, have a MUCH better bite (in reverse - due to their shape and being deeper in the water) with lots of low rpm torque available to turn em.
Outboard props are pretty much designed to push you fast in forward. This boat won't ever back like your old one would but with a little practice I'm sure you will do well. And as you already know there are many other reasons these are "better" boats to own.

Use your outboards to slow your turns. One in forward the other in reverse. Works well for a controlled reverse as well.
Congrats on the new boat. Sounds awesome.
